Milling around

Some weeks ago, for reasons I can’t remember now, I developed an intense interest in acquiring an elecric grain mill and grinding my own flour. Ever the skeptic, Olof refused to encourage this interest, but I carried on undeterred, reading and reading and reading some more until I settled on this one as just the mill for me. I spent some more time scouring the internet for good deals, and finally, at the end of last month I ordered one. It arrived Wednesday afternoon, and I set at once to milling.

I embarked on this adventure using regular wheat berries (matvete, på svenska), and I used my first flour to make a batch of cranberry muffins and some whole-wheat rolls. The muffins were better than the bread, I think, but both were good, moist with a nutty sort of flavor that store-bought flour doesn’t give. I’ve got orders in at a few different places for grains and “dough conditioners,” and once those arrive I’ll get started on the trial and error that I hope will ultimately lead me to the perfect loaf.
